Siberian Caviar
The finest Siberian Sturgeon are hand reared in the pure waters of the Goslawice farm, in Poland. Siberian displays a subtle, clean flavour with a cream and butter palate.

Oscietra Gold Caviar
Oscietra Gold comes from the Russian Sturgeon (Acipenser Gueldenstaedtii). This particular Oscietra has a distinct olive/gold colour, a delicate flavour and is often considered as the ultimate caviar. Its pearls are firm and poppy and become more buttery and nutty after a longer maturation period.

ARS Italica Oscietra Royal Caviar
ARS Italica’ Storione Ticino farm is in the north of Italy in the Ticino Park. It is the largest sturgeon farm in Europe. Traditional techniques are used to deliver a luxurious experience for connoisseurs of caviar. Prepared from the roe of the pure Russian sturgeon (Acipenser Gueldenstaedtii), it has a large sized grain, and coloured dark grey, dark brown and even black. Roe shell is firm and its flavour is pure, tasty and quite rich with hints of hazelnut and butter that intensify.

Salmon Caviar
Raised in the cool waters off the Tasmanian Coast, this Salmon Caviar is prepared according to traditional Russian recipes. Preserved with no artificial ingredients, the farm sustainably raises their product to ensure a premium product.

Yarra Valley Caviar Salmon Roe
Yarra Valley Caviar is the only dedicated Australian producer of freshwater Atlantic Salmon and a staunch believer in the humane treatment of its fish, taking a completely natural approach to its rearing and roe extraction. Their Atlantic Salmon Roe is well renowned across the restaurant trade nationally, for its signature burst of flavour and rich and robust characteristics, used to complement many gourmet dishes. Flavour options include Smoked, Truffle Infused, Bloody Shiraz Gin and Ikura Shoyu Zuko.

Shark Bay Wild Scampi Caviar
Hand-sorted and packed into tins with no additives or colourings, these pearls of various shades of blue are rather firm in texture. While not as creamy as Sturgeon Roe, the Scampi has a beautiful fresh, rich ocean flavour. This can be enjoyed on its own, or paired with oysters or fine sushi.
